Smoked Salmon & Egg Stuffed Avocado

Morning all and happy weekend! I don’t know about you but one of my favourite things about the weekend is that I let myself have a nice brunch, as opposed to the boring cereal or yogurt and fruit that I restrict myself to during the week – so I do get quite excited about it haha! Eggs are pretty much always involved and avocado and smoked salmon make regular appearances too – so this smoked salmon and egg stuffed avocado is right up my street…

My Delightful Potato Salad

Morning all and happy weekend! So I am going to another BBQ today and I have been put in charge of the potato salad – because even if I say so myself… I make a good one!

I have made up my own recipe over the last few years, just by trying different things and seeing what I like best. So if there is something in this you do not like, or there is something else you would prefer – you can easily change it. Also, there is no exact quantities with my recipe – I don’t measure or weigh anything. Just add or take away depending on  your taste and on how many you are feeding.

Ingredients – 

New potatoes –  bag of

Pancetta cubes –  packet or 2 (I always put lots in as I love it!)

Spring Onions –  bunch

Wholegrain mustard –  few teaspoons to taste

Garlic Mayo –  3-4 tablespoons (use normal mayo if prefer)

Creme Fraiche –  3-4 tablespoons

Flat leaf parsley – a chopped handful

Salt & pepper – to taste

Method – 

1 – Boil the potatoes in salted water and then put in a big bowl.

2 – Cook the pancetta – I fry it with no oil.

3 – Mix the rest of the ingredients together and then pour over the potatoes and add the pancetta – mix it all together and your done.

So my champagne is chilled and potato salad ready – I better get to this BBQ (without eating it all on the way)! Fingers crossed for sunshine!

Caramelised Fig, Orange & Feta Salad

Morning all and happy weekend! Hope you have some nice plans? Despite the weather still not being great I am going to a BBQ later on, so was looking for a nice salad to make and take with me – something other than your standard lettuce, cucumber and tomatoes!
